Chicken Fajitas

- 2-3 boneless, skinless chicken breasts (sliced into 1" strips)
- 3 tbsp. vegetable oil
- 2 tsp. salt
- 2 tsp. paprika
- 2 tsp. ground cumin
- 2 tsp. chili powder
- 1 tsp. coriander
- 1 tsp. black pepper
- 2 tbsp. lime juice
- 2 tbsp. garlic, minced
- 2 medium onions (sliced 1/2" wide)
- 2 bell peppers (sliced 1/2" wide)
- 1 bunch fresh cilantro, lightly chopped
- 1 package flour tortillas
Directions:

Mix salt and spices in a separate bowl, set aside; place chicken pieces into a bowl and sprinkle in 1 tbsp. oil, 2 tbsp. spice mix, 1 tbsp. minced garlic and 1 tbsp. lime juice

Mix well and let marinate for 20 minutes; slice the peppers and onions place in a bowl

Heat skillet on medium high heat; add 2 tbsp. oil and chicken; cook cook until done (approximately 10-15 minutes)

Add peppers and onions and toss; add the rest of garlic and spice mixture

Cook together for approximately 5-7 minutes until chicken is fully cooked and vegetables are tender

Serve with fresh cilantro, lime juice and sour cream
